We approach catering and event planning on an individual basis.  We use our years of experience, listen to what your needs are and arrange something specifically for your event. Here are some basics…….

St Louis or Baby Backs all have 13-14 ribs in a rack.
We recommend 1/3 of a rack per person.
As a gauge: 4 racks of St Louis will fill a full tray
As a gauge: 6 racks of Baby Backs will fill a full tray.

Whole chickens:
We cut our whole birds into 1/8s or 1/4’s.
As a gauge: 4 whole chickens will fill a full tray

Pulled Pork, BBQ Brisket, Pulled Chicken and any of our any of our handmade Sausages:
We recommend 6 oz per person.
As a gauge: 10 pounds of these items will fill a full tray.

We sell our sides by the quart.
There are 4 servings to a quart.
The same calculations apply to all our sides.

Servers and Chefs:
Servers will arrive at your location setup chaffing dishes, get your food ready and serve your guests.
Servers are billed at $25 per hour.
Chefs will arrive at your location either with our equipment or equipment you have provided.
Chefs are billed at $35 per hour.
Gratuities are at your discretion.
