Troegs Brew Master’s Dinner

THIS EVENT HAS BEEN SOLD OUT

On Tuesday, May 15th Holy Smoke is pleased to announce that Christopher Trogner the owner of Troegs Brewery will be our master of ceremonies for our 2012 Brew Masters Dinner.

Chris has recently been extremely busy moving his brewery to Hershey PA. He has been a good friend to Holy Smoke, since doing one of the original Brewery Series Nights  when they were new to NYS.

The idea of this evening is to showcase Chris, his great beers and share a great meal with friends.

If you are fan of Mad Elf, Nugget Nectar, Troegenator, Java Head Stout…… the list is huge. Rarely do you see a brewery receive an overall  ”A” rating from Beer Advocate as Chris has done with Troegs along with his brother John.

The night is a 5 course dinner, each course paired with a different Troegs beer. We usually depart from our BBQ theme these nights and the final menu will be posted here after Chris and I have time to agree on the pairings.  We have so many great beers to choose from, that it will be a fun task to do this menu.

They are first come first served. Holy Smoke will be closed to the public the entire day for this special event. The tickets for this event are $75 which includes everything.

Dogfish Head Brewery Series Night

DOGFISH HEAD TAKES OVER THE TAPS

MARCH 24th SATURDAY NIGHT

When DFH and I were setting up this event up months ago, the plan was to feature as many “non core” beers as possible. We figured, you can always get 60 and 90min but the line up we have this time is off the hook.

As DFH has hit tremendous growth over the past few years, they have decided to take certain beers out of rotation and brew them basically when time and space are available. World Wide Stout, Fort and Pangaea are all going into semi retirement.

At least for us, World Wide Stout stands as one of the  greatest Imperial stouts ever made and Fort, one of the greatest fruit beers. Even though they are being put up the shelf for a bit, they will return when Sam gets more space.

Chris Valente, DFH’s New York Regional Sales Manager will be here and will discuss the beers that are coming and going and the new plans to expand the brewery. After working with Chris these past few months, I have found him to be extremely knowledgeable and personable and will offer alot of insight into the fast moving world DFH.

Custom Smoked Meats Year Round

Smoked Salmon, Ducks and Turkeys

Over the years we have smoked some great items in our pits. Patrons have loved them so much that starting now we will be doing smoked salmon fillets, whole smoked ducks and smoked bone in turkey breasts year round. These items will be sold by the pound.

Canadian Salmon Fillet:  $10.00 per pound

This beautiful Canadian Salmon is marinated then rubbed with our seafood spices and smoked low and slow over our hardwood hickory fired coals. The result is a moist, deeply complex flavored salmon with a nice kick from our spices. Pieces weight between 2 and 3 pounds pre-cooking weight.

Whole Long Island Duckling: $6.00 per pound

For those who love the rich and complex flavor this meat gives, you will more thrilled after we brine, spice and smoke these great birds. The results are moist, full flavored duck without all the grease because of the hours spent in our pits. Ducklings weight between 5 and 6 pounds pre-cooking weight.

Whole Bone in Turkey Breasts: $4.50 per pound

The exact same bird we do here for the fall season. We brine them, rub them up with our spices and smoke them low and slow for 15 hours. The results are amazing. Moist, smoky and huge departure from that usual turkey you have been eating. Breasts weight between 16 and 20 pounds pre-cooking weight.

A “Very Belgain Christmas”

There is no doubt (at least in our minds), that Belgium is regarded as one of the greatest places to brew beer, many would say its is the best. They don’t rush, they use the best ingredients and a lot of it is brewed by the clergy.

With that in mind, we are going to ring in the Holidays with some of the best Belgium’s whether they are holiday beers or simply just great ones like our favorite St Bernardus, the holidays will be very merry when these beers are in the house.

Continue to check in as we put up some stellar brews in the month of December.
