Custom Smoked Meats Year Round

Smoked Salmon, Ducks and Turkeys

Over the years we have smoked some great items in our pits. Patrons have loved them so much that starting now we will be doing smoked salmon fillets, whole smoked ducks and smoked bone in turkey breasts year round. These items will be sold by the pound.

Canadian Salmon Fillet:  $10.00 per pound

This beautiful Canadian Salmon is marinated then rubbed with our seafood spices and smoked low and slow over our hardwood hickory fired coals. The result is a moist, deeply complex flavored salmon with a nice kick from our spices. Pieces weight between 2 and 3 pounds pre-cooking weight.

Whole Long Island Duckling: $6.00 per pound

For those who love the rich and complex flavor this meat gives, you will more thrilled after we brine, spice and smoke these great birds. The results are moist, full flavored duck without all the grease because of the hours spent in our pits. Ducklings weight between 5 and 6 pounds pre-cooking weight.

Whole Bone in Turkey Breasts: $4.50 per pound

The exact same bird we do here for the fall season. We brine them, rub them up with our spices and smoke them low and slow for 15 hours. The results are amazing. Moist, smoky and huge departure from that usual turkey you have been eating. Breasts weight between 16 and 20 pounds pre-cooking weight.
